Turkey and Lion’s Mane Soup
Turkey bone broth has a ton of collagen to help repair gut lining. Onions, carrot, celery, and garlic have prebiotic fiber to feed good gut bacteria. Then you have Lion’s Mane Mushroom, known for reducing brain fog, increasing concentration, and decreasing anxiety by reducing inflammation.

Let’s make some Gut and Brain Health Soup! Your gut health has a direct relationship with your brain and mental health. Most of your happy hormones are either produced in the gut (like serotonin) or their production is heavily influenced by the gut (like dopamine and endorphins). So when your mental health is suffering, it may be time to focus on gut health.

This soup is a great start in doing so. Turkey bone broth has a ton of collagen to help repair gut lining. Onions, carrot, celery, and garlic have prebiotic fiber to feed good gut bacteria. Turkey contains tryptophan, an amino acid that not only is a precursor for serotonin but also helps certain bacteria in the gut to decrease intestinal permeability (aka leaky gut). Then you have Lion’s Mane Mushroom, a new fave of mine, known for incredible brain boosting capabilities of reducing brain fog, increasing concentration, helping to generate new brain cells, and decrease anxiety by reducing inflammation. Wow!!

Ingredients:

  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 4 carrots, chopped
  • 3 celery stalks, chopped
  • 1 tbsp minced garlic
  • 6 cups turkey bone broth
  • 4 cups water
  • 3 cups precooked turkey, white or dark, chopped
  • Salt to taste
  • Dried or fresh thyme to taste
  • 2-3 bay leaves
  • 1 1/2 cups fresh lion’s mane mushroom, chopped

Directions:

  • Heat olive oil in a large pot on medium high heat and add the onion, carrots, and celery. Stir and cook until the onions are glassy and tender
  • Add the garlic, stir, and cook for one minute
  • Add the broth, water, turkey, salt, thyme, and bay leaves. Stir and let simmer for about 20 minutes
  • Add the lion’s mane mushrooms. Stir and let simmer for 5-10 minutes
  • Enjoy!! Lion’s Mane can be found at some farmers markets and health food stores. Or you can get a kit on Amazon and grow them in a bucket like I do!
