BBQ Pulled Chicken

My kids have been obsessed with pulled pork for a little while and I was wanting to create a new recipe, so I figured I could make it a little bit healthier. By using chicken breast, it stays nice and lean. You won't miss the fat from the pork here, the dish is full of flavor. The chicken broth in the slow cooker helps tremendously to keep the chicken nice and juicy. Choose your favorite barbecue sauce or choose to make your own. I like to aim for a low sugar option.

Serve this BBQ Pulled Chicken as a sandwich or on its own. It's great for summertime gatherings, as the quantity can be multiplied for any crowd!

Makes about 4-6 servings

 

Ingredients:

  • 1 1/2 lbs Chicken Breast (about 3 breasts)
  • 1 cup chicken broth
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • 22 oz of your favorite low sugar barbecue sauce

 

Directions:

  1. In a slow cooker, place chicken breasts, broth, salt, and garlic powder. Cook on high for 3-4 hours or low for 6-8 hours.
  2. Remove chicken from slow cooker and shred with two forks. It should come apart very easily.
  3. Rinse out the slow cooker insert and put it back in the slow cooker.
  4. Return chicken to the slow cooker, add barbecue sauce, and stir well. Keep on warm for about 20 minutes to allow chicken to absorb the flavor of the sauce.
  5. Serve the BBQ Pulled Chicken however you like and enjoy!
