Apple Pumpkin Muffins

Apple and Pumpkin - classic fall flavors - marry together beautifully in this Apple Pumpkin Muffin recipe. This is one I have been making and perfecting for many years. Always a hit at the office (when we would go to one) or now at my neighbor's annual Halloween party, these Apple Pumpkin Muffins are guaranteed to satisfy all those fall flavor hankerings!

Makes 18-20 Muffins

Ingredients:

  • 2 ½ cups whole wheat flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • ½ teaspoon ground nutmeg
  • 2 eggs
  • 1 cup canned pumpkin
  • ½ cup coconut oil
  • 4 medium tart apples, peeled and finely diced

Directions:

  • In a large bowl, combine the first seven ingredients.
  • In a small bowl, combine eggs, pumpkin and oil; stir into dry ingredients just until moistened.
  • Fold in apples.
  • Fill greased or paper-lined muffin cups two-thirds full.
  • Bake at 350° for 30-35 minutes or until muffins test done (toothpick comes out dry).
  • Cool for 10 minutes before removing from pan.
